January's Recipe of the Month... Chicken Gyro's with Tzatziki :)

If you guys have read my 52 for 2012 post, then it won't be a surprise to you that one of my goals was to make, try, and blog about one new recipe from Pinterest each month (or more). This months is Chicken Gyro's with Tzatziki from Annie's Eats Blog... they look utterly amazing! I made them tonight and I can tell you they taste as utterly amazing as they look... I modified her recipe a little because i don't eat onions and it called for them...

Chicken Gyros
Yield: about 4-6 servings
INGREDIENTS
For the tzatziki:
16 oz. plain yogurt (not nonfat, if possible)
1/2 hothouse cucumber or 1 regular cucumber, peeled and seeded
2-3 cloves garlic, pressed through a garlic press (or finely minced)
1 tsp. white wine vinegar
Salt and pepper
Squeeze of fresh lemon juice
Extra virgin olive oil
For the chicken:
4 cloves garlic, smashed
Juice of 1 lemon
2 tsp. red wine vinegar
2 tbsp. extra virgin olive oil
2 heaping tbsp. plain yogurt
1 tbsp. dried oregano
Salt and pepper
1¼ lbs. chicken pieces (I use boneless, skinless chicken breast halves)
To assemble:
Pita bread {whole wheat preferably}
Fresh tomatoes, seeded and diced


DIRECTIONS
To make the tzatziki sauce, strain the yogurt using cheesecloth over a bowl. Let strain for several hours or overnight, if possible, to remove as much moisture as possible.

Shred the cucumber. Wrap in a towel a squeeze to remove as much water as possible. Mix together the strained yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour.

Cook the chicken as desired, either in the skillet or with the broiler. (I butterflied the chicken breasts and then cooked them under the broiler.) Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips.

Heat pitas (I sprayed with some spray oil and then popped them in the toaster oven for a few minutes). Top with chicken, tzatziki sauce, and diced tomatoes. Serve immediately.

Give My Regards to Broadway!

If there is one thing that i truly love it is musicals! I adore them. I have my favorites of course but i've never been to, or seen one that i haven't loved. From Anderson University's production of Thoroughly Modern Millie, to my well worn DVD of Evita I just LOVE musicals. I know it's not normal, and i'm well aware of the fact that most people don't share my sentiments but i've decided in honor of my love of Broadway i will post a List... Musicals! the ones i've seen the one's i want to see, and my personal favorite the ONE i would sell every pair of shoes i owned to buy tickets too! {thats a big deal for me... i love shoes as well :)} So Here goes!
My Top Five Favorite Musicals
5. Cats
Not my favorite musical, however it's one of the few i have actually seen live. I went to a local production of this when i was in elementary school, and it's my first musical so it makes the list.
4. Thoroughly Modern Millie
This is a great musical, and it was made better by the fact that i got to see it performed by the Anderson University Drama department, not just once but twice while i was going to school there. It was a great performance and if you ever are in Anderson stop by AU and check these guys out they are wonderful!
3. Titanic The Musical

This Beauty of a musical holds a special place in my heart for several reasons... First Titanic the Movie is one of my All time favorite movies... Secondly, History is my major, and the Titanic just so happens to be a topic that I am an almost expert on... and Thirdly well it just so happens that I worked this particular show with my roommate while I was living in Anderson. So not only did I get to see this musical six times, i got to watch it from a vantage point that was to die for! The Balcony where I worked the spotlight three shows a weekend for two weeks!!! It was the best/most stressful/most wonderful experience i had, had to that date! I love the Alverson Center Theatre in Anderson SC, and I would love to go back and see a play there again anyday. Oh and just for fun here's a little picture of my work... LOL I'm the one doing that lovely spotlighting on the singer!
2. Rent

Though i adore rent, i've only ever seen the movie version and that makes me sad. However I adore Idina Menzel and would watch the movie over and over again just to watch her! In addition to Idina i love the music, Rent has one of the better soundtrack's i've ever heard in a musical and I love it! It's my standard driving home music...

1. EVITA

As you may have guessed from my intro, I LOVE EVITA! It's my number one all time favorite musical, my DVD has been watched more times than all of my other DVD's combined, It's scratched from being played so much, and i can sing every word to every single song even if i were playing the movie on mute {thats love right there}.

What a Week!... 1/22/2012

SO this has been another CRAZY week, i've started who knows how many blogs and not finished a single one {i hope to get three or four of them out to you this week God and my Schedule willing}. Between school and homework i haven't had a lot of time to get to work on my goals, however i have made a little bit of progress on one of them... I've got the very first of my recipe blogs coming at ya'll this week and it is a YUMMY one if i do say so myself. But that's enough about next week.. this week was a lot of fun! We started Rehearsals for the Homecoming Talent Show (it's next week can you say nerve racking), my diet is still going good even though i did cheat a little bit this past week {Outback, Mexican, and Chili's all in one week SHAME is my name :) Not really only the mexican was super bad for me}. I haven't been taking my picture a day, but i'm starting on that today... i already got up this morning and took Pic Number one {i'll be posting them once a week on Saturdays!} However i think the most exciting thing this past week was i got my first tattoo... and I LOVE It... it turned out perfectly (and i can cross number 6 0ff my 52 in 2012 list!)

I got the infinity sign, with love in it... It's kind of Cliche but I love it and it serves as a reminder to me daily of the way I am loved by my heavenly father... He loves me infinitely and I should love others the same way :)

52 in 2012...

These are 52 goals i want to complete by the end of 2012, there are 52 because their are 52 weeks in a year and that in theory allows for the completion of one goal per week. However some of my goals are more long term goals that can't be accomplished in a week, and others will take the whole year. The point is that by this time next year i hope to have completed them all!... I may need some help/encouragement to complete some of these...
1. Be a more dedicated blogger {post at least four times a week}
2. Read the Bible on a regular basis
3. Write more of my own stuff and less Fan-Fiction
4. Run a 5k {or several} {did my first 5k on April 14, 2012}
5. Get more than 100 followers by the end of this year
6. Get a tattoo {completed 1/20/12}
7. get a better/another job {completed 2/06/12}

8. Go on a vacation
9. Find a Church to call home.
10. Learn to swim
11. Loose 42 lbs, and be the healthiest i've ever been
12. Teach myself how to crochet
13. Learn how to apply make up and do my hair
14. Start being more active in school.
15. Start Collecting sorority and school tee shirts for a tee shirt quilt.
16. Witness a Miracle
17. Celebrate my 21st birthday with Ridge
18. Buy my first Lilly {once i've reached my goal size and weight}
19. Own/Wear Salmon colored pants
20. Go to Biltmore House
21. Get Contact Lenses
22. Hike in the mountains at least ten times this summer/fall
23. Take up a new hobby
24. Start a Trend
25. Give up social networking for an entire week
26. Teach Someone something
27. Call my family more often
28. Take on a Leadership role in something {2012 - 13 Executive Council - Service Project Coordinator for Sigma :)}
29. Make the Dean's List each term
30. Do at least one craft project a month, blog about it
31. Learn to cook one new recipe a month, blog about it
32. Get Engaged {I know it's a silly goal that I have no control over but a girl can dream right!}
33. Have Breakfast in Bed, that I didn't have to make for myself.
34. Have a Little... and make wonderful gifts for that Little...
35. Learn to love my flaws
36. Spend more time with my parents
37. Help someone in need
38. Help in a soup kitchen or homeless shelter
39. Start scrapbooking... again
40. Give away clothes I don't wear to Goodwill

42. Own quality heels that are appropriate for school as well as nice occasions
43. Wear Pantyhose every time I wear a skirt or dress {no excuses}
44. Dress nice at least once a week... No JEANS!
45. Take a Taxi
46. Go to a Gamecocks football game
47. Learn how to play tennis
48. Kiss my boyfriend under mistletoe next Christmas
49. Make time for my friends who aren't here at school, don't neglect them
50. Learn to be more flexible in my life, don't take everything so seriously
51. Have a party for no reason... just celebrate life
52. Sing in front of a crowd, be nervous but don't let it get the best of me.

What a Week!... 1/15/2012

Well this week actually went pretty great! I started back to school and started my new diet. I start back at field placement this week and i got all 3's {thats a good thing} on my 6 month review at work... even though i'm slightly confused how it's been 6 months since i've only been their since September 12. So far the new year is off to a fantastic start, and if i'm still working at my job in July, and i get all 3's on my yearly i'll get a raise which is sweet! I've been kinda lazy the past week and i really need to get back to working out and doing things that i can blog about! LOL I guess that's all for this weeks weekly wrap up...

3. Jewelry Tree - It's precious and I have no clue where it came from, it was a gift but it's too cute not to share!


4. My Handy Dandy backpack {since this was the first week of school i pulled her out of retirement! She was actually purchased my freshman year of High School and i've been using her faithfully for the past almost seven years!} LL Bean


5. Sinful Colors Nail Polish in Savage... it's a beautiful teal that I LOVE! {Walgreens}

Back To School...

Tomorrow is the first day of my 6th semester of college... wow almost three whole years have gone by sooo fast, it seems like just yesterday i was graduating from high school and starting this scary journey and now i'm more 2/3 of the way through. 6 semesters down 3 more to go {i'm on the 4.5 year college plan instead of a 4 year plan lol} The though occurred to me recently that at 20 years old, and 2/3 of the way done with my college career It's about time for me to start enjoying life a lot more! This past semester a lot has changed and i couldn't be happier about it! I was admitted into the Teacher ed program at school, moved out of dorms for good, and am finally getting somewhere with my History major so i'd say things are going well at this point. The one thing i've been really disappointed about has been my inability to keep up with this blog like i want to, so I've added an amendment to my New Life Resolution list, and that is to keep this blog up and going, post at least twice a week, and do something great with my little baby blog! All this will start tomorrow! {Well actually I guess you could say it's starting tonight} This semester is going to be rough, but I won't be forgetting about my wonderful blog family! New Years Resolutions... 2012 Edition

Happy New Year Ya'll... It's 2012 now and you know what that means... Time to make resolutions that We will never keep. I do this every year, i sit down and make a long list of things I'm going to change about myself/my life in the coming year and every single year it ends the same way, two days after the new year i'm sitting on the couch doing every thing i swore i wouldn't this year however that won't be the case. This year i'm not making new years resolutions, I'm making changes and this year I am going to stick to them because i've realized that I CAN NOT keep doing the same things and expecting different results {hint hint the definition of insanity is doing the same thing and expecting different results} so this new year i have a list, not of New Years Resolutions, but of New LIFE resolutions, and hopefully this time next year you'll all be looking at a healthier, happier, better me! And since i won't hold myself accountable without some help i'm letting you all see my list so you can keep me accountable to it when i don't want to be.
